Elderberry Jams and Jelly

Most species of Elderbery are edible when picked ripe and then cooked. Both the skin and pulp can be eaten. However, it is important to note that most uncooked berries and other parts of plants from this genus are poisonous. Sambucus nigra the European Elderberry is the variety that is most often used for health benefits as it is the only variety considered to be non-toxic even when not cooked.

The Fruit Preserving Section of the Food Ministry issued during the War the following recipe for Elderberry and Apple Jam:

  • 6 lb. Elderberries,
  • 6 lb. sliced apples,
  • 12 lb. sugar.

Make a pulp of the apples by boiling in water till soft and passing through a coarse sieve to remove any seeds or cores. The Elderberries should also be stewed for half an hour to soften them. Combine the Apple pulp, berries and sugar and return to the fire to boil till thick.

Another Recipe:

Equal quantities of Elderberries and Apples, 3/4 lb. sugar and one lemon to each pound of fruit. Strip the berries from the stalks, peel, core and cut up the apples and weigh both fruits. Put the Elderberries into a pan over low heat and bruise them with a wooden spoon. When the juice begins to flow, add the Apples and one-third of the sugar and bring slowly to the boil. When quite soft, rub all through a hair sieve. Return the pulp to the pan, add the rest of the sugar, the grated lemon rind and juice and boil for half an hour, or until the jam sets when tested. Remove all scum, put into pots and cover.

Elderberry Jam without Apples: 

To every pound of berries add 1/4 pint of water, the juice of 2 lemons and 1 lb. of sugar. Boil from 30 to 45 minutes, until it sets when tested. Put into jars and tie down when cold.

Elderberry Jelly:

The Elderberry will, of course, also make a jelly. As it is a juicy fruit, it will not need the addition of any more liquid than, perhaps, a squeeze of lemon. Equal quantities of Elderberry juice and apple juice, and apple juice from peeling, will require 3/4 lb. of sugar to a pint. Elderberry Jelly is firm and flavorous, with a racy tang.

Roasted Rice with Dates, Cinnamon and Cardamom

This is a decadent dish to serve your loved one on a sweet evening in! Lovely as a side dish for Mediterranean lamb dishes, any number of vegetables, or even as a sweet dessert, you can’t pass this recipe up!

In Ayurveda, the word for juicy, sensual vitality is “ojas.” Some special foods have lots of ojas, and, as it happens, you can eat them if you feel the need to increase your sense of vitality and juiciness. (There are probably not many people who don’t yearn for that sweet sensuality in life.) In the ancient texts of Ayurveda, Ojas is said to have the smell of toasted rice. The main two ingredients in this recipe, dates and rice, increase ojas in your body, thereby giving you a healthy, happy glow.

Roasted Rice with Dates, Cinnamon and Cardamom is very easy to digest. It’s even perfect for those who are recovering from illnesses or suffering from weak digestion. Sometimes, feeling rundown leaves us feeling sad – this recipe is the remedy for both! The soft, soothing nature of rice and dates will calm your belly and help you feel strong and stable.

Ingredients:

  • 1 cup Basmati Rice
  • 1/4 tsp Black Pepper
  • 1/4 tsp Cardamom
  • 1/4 tsp Cinnamon
  • 4 whole Dates (dried)
  • 1 tbsp Ghee
  • 2 pinches Salt (Mineral Salt is best)
  • 3 cups Water

Preparation:

Chop dates. Heat a medium saucepan on low, and add ghee. When it melts, add uncooked rice. Stir continually for 2-5 minutes, until it smells sweet and all the rice is coated with ghee. Add the spices and dates. Stir for one more minute. Add water and bring to a boil. Cover pot and lower to a simmer. Cook until rice is tender about twenty minutes.

Crown Chakra Healing Smoothie

It is responsible for our dreams and sleep/wake cycles. When we connect with our intuition we can comprehend the present and create a path for actualizing our purpose. This is where we can receive clear guidance. The third eye is the seat of the pineal gland.

Here’s the recipe:

  • 1/2 cup frozen blackberries
  • 1/2 cup frozen black cherries, pitted
  • 1 cup purple kale
  • 1/4 cup grape juice
  • 3/4 cup vanilla almond milk
  • Handful of ice

Pulse all ingredients together in a blender until smooth. Serve immediately.

Throat Chakra Healing Smoothie

The Throat Chakra relates to speaking our truth, communication, and self-expression. If you feel you have a hard time saying no to others, standing up for yourself, and speaking your truth or expressing your emotions you may have a blocked throat chakra. Blue foods will help with self-expression. In addition to eating certain blue foods, to balance this chakra simply speak up and say what your heart is urging you to say! You’ll find that any throat issue will miraculously start to go away as you align yourself with your truths.

  • 1/2 cup frozen blueberries
  • 1/2 cup frozen blackberries
  • 1/4 cup prune juice
  • 3/4 cup cold water/almond milk/coconut water
  • Handful of ice

Solar Plexus Healing Smoothie

The solar plexus is our yellow chakra, it is the third slowest frequency of light, and houses our ego and our self-esteem. This is where we store our power, strength, warrior energy, and overall sense of self. This chakra is called Manipura, which means lustrous gem; it shines brightly like the yellow sun. If you feel like people walk all over you or you find yourself having constant power struggles then you might have a shrunken solar plexus. On the other hand, if you are narcissistic or tend towards bullying or ostracizing people, then your solar plexus might be enlarged.  Yellow foods help balance this chakra.

  • 2 frozen bananas, chopped
  • 1 quarter of a fresh lemon, squeezed
  • 2 tsp golden honey, if desired

Sacral Chakra Healing Smoothie

The sacral chakra relates to eliminating toxins from the body—after all it is in the area of the spleen, bladder, and kidneys.  This chakra relates to our creative force, sexuality, and emotions. It relates to addictions of all kinds, whether they are addictions to drugs, co-dependent relationships, or sex within an unloving relationship.

  • 1/2 cup chopped frozen mangoes
  • 1/2 cup chopped frozen papaya
  • 1/4 cup carrot juice
  • 1/2 cup orange juice
  • 1/2 cup cold water/almond milk/coconut water

Root Chakra Healing Smoothie

The root chakra is located at the base of the spine and is a red spinning wheel of light. Red is the lowest frequency of the visible light spectrum and thus foods that are red help balance this chakra (also any root vegetables or herbs). This chakra relates to our survival, basic instincts, and needs. If someone has a small root chakra, they might have trouble meeting their basic needs, and if someone has an enlarged root chakra they might be greedy. It’s interesting to note that many of these root chakra related foods are recommended by doctors to heal the prostate, as this organ is correlated with this energy center.

Here’s the recipe:

  • 1/2 cup frozen strawberries
  • 1/2 cup frozen raspberries
  • 1/8 cup fresh cranberries
  • 1/4 cup pomegranate juice or cherry juice
  • 3/4 cup cold water/almond milk/coconut water
  • Handful of ice

Makes one serving. Pulse all ingredients together in a blender until smooth. Serve immediately.

Avocado Citrus Salad

The Salad:

  • 2 grapefruit
  • 3 oranges
  • 2 avocados
  • Lettuce

The Dressing:

  • 1/2 cup lemon juice
  • 1/2 cup salad oil
  • 1 tsp salt
  • 1/4 cup honey
  • 1/4 cup raspberry (or any red) jelly or jam

Instructions:

Peel and section grapefruit and oranges. Peel and slice avocados lengthwise. Alternate grapefruit sections, orange sections and avocado slices on lettuce. Combine the dressing ingredients; blend well. Serve the dressing over the salad.

Yield: 6 servings
