Curry & Coconut Soba Noodles


  • 8 oz buckwheat soba noodles
  • ½ cup fresh basil, chopped
  • ½ cup toasted pepitas (pumpkin seeds)
  • 1 cup almond butter
  • 2 tablespoons green curry paste
  • 1 cup coconut milk
  • 2 tablespoons tamari

Boil noodles and drain. Whisk together curry paste, coconut milk, tamari, and almond butter. Add mixture to noodles and stir. Transfer pasta to bowls and top with fresh basil and pepitas for serving.
